Sonic 3 & Knuckles. Got it preinstalled on my first computer and since then it's one of the few games I keep coming back to. The Sonic 3 Complete rom hack is my favorite version, with both the Megadrive and PC soundtracks, different level layouts, difficulty settings and much more.
Angel Island Revisited is also really good, especially with it's high resolution wide screen visuals and different game modes. Sadly it does not feature the additional gameplay changes and the PC/Beta soundtrack(which in my opinion is better) found in Complete.

Sonic Mania and Generations are also fantastic, and with the huge modding community, you can have hours of fun and many reasons to replay them.
