It's too hard for me to select the best overall game so I'll separate it into different categories.
for the best to controls: probably SA1
the art direction and sound design: Sonic Unleashed
and for the best gameplay: sonic 3&k

Out of your options I voted for Mania. 3 & Knuckles was my favorite one up til then. I might grow to like Mania more if I play it more, I've only played through it once so far.
