No release date yet. Some people are speculating it will be released Q4 this year (during fall) but I think it's gonna be delayed until next year.

ok this may sound stupid because I didn't understand the phrase too good, but, if Monster Hunter 3 is made by CAPCOM how could it replace Zelda by Nintendo

All I know is that MH3 deserves replacing LoZ in my opinion. There's nothing to do after you finish LoZ unlike MH which gives you a lot of things to do and multiplayer is fun!

The Zelda games for DS were VS multi player. Not that great, but at least it was there.
