A colt is a young male, specifically between 1 and 4 years old, though I'm not sure the same rules apply to this show as in reality.
A filly is a young female, same ages as a colt.
A foal is under 1 year old.
A stallion is a male over the age of 4.
A mare is a female over the age of 4.

Like I said though, no clue if the real world terms transfer literally into the show.
