Last boss in Mario Galaxy (bowser)
Last boss for team rose in sonic heroes
Knuckles in Sonic the Fighters
Lord Ix in Sonic Chronicles

Dood, everybody knows the easiest boss is the 2nd fight with Sir Lancelot in SatBK. Either him, or Taurus Fire DX from Mega Man StarForce 2

I would say 343 Guilty Spark, Monitor of Instilation Zero Four, Boss Fights so short It's almost sad, the Cutscene is just sad though, I cried

Oh! Also Tartarus From Halo 2 is pretty easy.
