The only quest out of the 3 you listed that I've done is Beyond the Beef, and the only roadblock I came across with it is not being able to bring my holdout weapons into the casino (which isn't even a requirement to finish the quest but it made it easier for the method I took) since my Sneak stat was too low. I just went on some other quests for a while until I leveled up my Sneak skill enough, and after that the quest was smooth sailing. I mean, look at all the ways you can complete the quest (spoilers I guess). It accommodates every kind of character build so I can't imagine how you could get stuck on that one.

Because I couldn't sneak, I couldn't lockpick, I had no fame to get sponsored, and I locked myself out from getting the key from Mortimer.

And the game said I only had till 7pm before shit goes down, so EXCUSE ME for thinking it was urgent so I didn't walk away to try again at my convenience.

I couldn't lockpick and I didn't get the key from Mortimer either. As I said, there's multiple ways to complete the quest and according to the chart I posted there's a way you can beat it without any stat checks. But even if there wasn't, did it really bother you that you have to level up your character to complete a quest in an RPG?

Oh, that's easy

In the first place, I treat Western RPGs much differently than JRPGs.

JRPGs. I'm more focused of completing the story, whatever quests I can't do I can just leave it, and their combat systems are typically enjoyable for me that when it's time to grind I can just go on autopilot.

With WRPGs, since they focus more on self-insert stories, I try to Role Play(go figure) and try to do all the things I want to do and would do, which typically involve just me being a drifter going from place to place and sorting out people's problems and bettering the world in my own way. Their combat is normally sufficient enough to satisfy me with my few scruffles here and there, but primarily I play these games for the wandering.

tl;dr, because combat in WRPGs are not fun enough for grinding.

Combat isn't the only way to level up in the game. You also get experience from completing quests and challenges, picking locks, hacking computers, passing stat checks, and probably by doing some other stuff. I've never even had to grind because I level up naturally while progressing through the game, and during quests I usually take the pacifist route whenever possible. If you've seriously been having trouble with the game, you're either not doing enough quests or you're distributing your stats in a weird way. So again, if you can't finish a quest then just go do something else for a while and come back when you've levelled up a bit. Just because it's a WRPG doesn't mean you can cheese your way through the game.

Well if I'm going to tell you the best way to accomplish these quests, first I'm going to have to ask a question. What do you want out of them? Like Eli said there are multiple ways to complete a quest and even different endings for each so you should be fine in most cases.

Though even if you get an unsatisfactory ending, you said it yourself, "That's what multiple playthroughs are for". Even still I'm 99% positive the 7:00pm "time limit" only matters for when you're actually in the basement as that's the only time you can call the waiter to bring up the food and drinks. The quest won't actually fail.

So let's weigh your options:

Beyond the Beef:

Save Ted Gunderson and...

Expose Mortimer
  • Expose Mortimer as a cannibal by using fake meat and entering the Employee Banquet Hall while he's explaining what the guests ate.
  • Sabotage the dinner by spiking the drinks beforehand.
  • Save Heck from the Freezer without a replacement, ruining the dinner.

Help Mortimer
  • Replace Ted with Carl St. Claire III or a human companion.
  • Replace Ted with an unwanted human companion.
  • Replace Ted with the fake meat dish without publicly exposing Mortimer.

Kill the Gundersons and...

Expose Mortimer
  • Do any of the above methods after Heck or Ted have died.

Help Mortimer
  • Replace Ted with the Fake Meat Pie after killing him.
  • Replace Ted with a human companion after killing him.
  • Replace Ted with Carl St. Claire III after killing him.
  • Do any of the above after killing Ted and spreading his remains in Heck's apartment, then reporting to a Securitron.

Note: Why kill the Gundersons?

Note: I can't get the keys from Mortimer!
Stealth kill him and take the keys or pick-pocket them. Stealth killing Mortimer will NOT turn the White Gloves hostile.

Convince the Kahns to commit suicide at Hover Dam.
  • Convince Papa Kanhs Advisers to break their alliance with Cesar and convince Papa that the Kahns have no legacy.
  • Convince Papa Kanhs Advisers to break their alliance with Cesar and convince Papa that the Kahns have no legacy after bringing him the book from The Old Mormon Fort.

Convince the Kahns to leave the Mohave after fighting at Hover Dam.
  • Convince Papa Kanhs Advisers to break their alliance with Cesar and convince Papa that the Kahns have to leave the Mohave..
  • Convince Papa Kanhs Advisers to break their alliance with Cesar and convince Papa that the Kahns have to leave the Mohave after bringing him the book from The Old Mormon Fort.

Silently kill Papa Kahn and...

Let Regis become the new Papa Kahn.
  • Convince Regis to side with the NCR or simply drop the Kahn's alliance with Cesar.

Become the new Papa Kahn.
  • Simply tell Regis what you want the Kahns to do.

Exterminate the Kahns.
  • Pretty self explanatory, honestly.

Note: How do I become Papa Kahn?
Avenge the Kanhs lost at Bitter Springs by completing We Are Legion for Dead Sea. If you use Stealth Kills, the camp's survivors will not turn hostile until after the quest is completed.

Note: Why kill the Kahns?
Colonel Moore asks you to do it as part of an NCR quest. You can still complete this quest this way if Regis somehow accidentally dies.

As for How Little We know...that quest is pretty fucking big. I'll help you with that one but first I need to know what you've done so far in it. Telling me what you've done in the other two quests would also help.
