hmm..............I'd have to say, the Phoenix thing from Sonic Unleashed. All you did was wait until it came down to the ground and throw a pot of water on it (as the Werehog I do not like the werehog)

I think the "Egg Viper" from Sonic Unleashed is the easiest boss. I mean, he just repeats the same moves over and over and they're SO easy to dodge and when you attack, it takes a ton of health out of it's health bar.
